I can’t get away from pumpkin. Especially during the fall months, but I don’t mind because it always rocks my world. I like to start and finish my day with a good dose of the stuff. These muffins are the perfect way to accomplish one half of that task. They’re a more travel-friendly version of the wonderful pumpkin bread, but just as delicious.

My Top 5 Scary Movies

In honor of the day I figured I’d offer my take on the movies that scare me the most. Most of these have terrified me so much that I refuse to watch them. I’m not much for scary movies. I just don’t like that feeling of having to be afraid of something. Life is scary enough. I have also included an honorable mention that doesn’t fall into the genre of a scary Halloween movie but it still scared the willies out of me.

Cook Booking

As the second (self-published, mind you) cook book comes to a close I’ve been thinking about what I’m going to do for the next one. I don’t know why, because it usually takes me until the end of the summer to recover from the previous one. But my first book was just a plain jane collection of recipes that I did from my mother’s favorite recipes that she has, and then everyone wanted another book, so the second is all desserts. I know I really want some kind of theme but I have yet to really come up with something that blows my socks off.

My Super Sandwich Secret

I’ve decided to divulge my super secret for making the perfect grilled cheese sandwich. I’ve done this particular way of cooking them for the past few years after I got bored with the plain ‘ol way of doing it. I had never been a huge fan of grilled cheese sandwiches. I don’t like the orange cheese slices, the bread always ended up soggy, so I upped the ante.
Personally, I prefer mozzarella cheese in my sandwiches. I also like to add bacon and tomato, which probably makes it more of a panini than grilled cheese, but it’s all the same to me.
But there’s one ingredient that I add that absolutely makes the sandwich….

I want to apologize ahead of time, because of the theme of my next cookbook, the majority of the upcoming recipes will be of the sweet nature. Sorry! Lest I have a rare macaroni recipe or whatnot, they will continue to be for the next little while.

I guess it’s the season for these things, and since some people like them, I decided to make some homemade candy corn. After learning just how delicious fresh marshmallows can be, I figured the same can go for any type of candy. The fresher the better. However, I didn’t eat these. I just don’t like them, and that’s my lot in life to not like things people think I’m crazy for not liking. I think part of it is I always thought they were witches’ teeth. But whatever.

I first had a real kolache a couple years ago in West, Texas at the famous “Czech Stop.” It’s a gas station/bakery that serves an array of kolaches (both fruit and sausage) as well as other stuff, but it’s the kolaches that keep the people coming in at all hours of the night, which make it necessary for it to be open 24/7. But, it was the cream cheese kolaches that became my favorite.
As I was finding recipes for my next cookbook, I wondered if pumpkin kolaches would be good, and invariably the answer is “of course!” However, I could never find a recipe for them, so I came up with my own.

Heaven in a Crust

I’m a little proud of this recipe, not to toot my own horn, but I’m really glad it came out wonderfully cause it’s the perfect combination. A little back story. I had come across a recipe for Maple Pumpkin Cheesecake in the Better Homes and Gardens cookbook and it sounded good, but I’m not a huge fan of maple syrup (which played a large role in the flavor), so I decided if I was going to make it without the syrup it would need a little something extra. After thinking about the recipe and its ingredients some more I realized one thing. It didn’t include any cinnamon. In all of the wonderful pumpkin recipes I’ve ever had, cinnamon seems to play an integral part in providing that flavor. Cinnamon and pumpkin were born to be together. So, I concluded maybe what it needed was some lovely cinnamon mousse on top. And the result is something wonderfully delicious. With the pumpkin cheesecake and light cinnamon mousse, there is a taste similar to that of a thanksgiving pie, only creamier.
